Cacao and pecan granola

This has to be one of my favourite recipes yet! And granola is so easy I don’t know why people buy it anymore. It’s my cacao and pecan granola with freeze dried strawberries. Pairs perfectly with organic milk or yogurt and chopped bananas! A lovely way to start the morning - you know there are no horrible additives.

Ingredients

400g oats
100g pecans
100 g omega seed mix (a mixture of linseeds, sunflower seeds and pumpkin seeds)
3 tbsp chia seed
65g cacao nibs
20g cacao
80ml maple syrup
1 tsp salt
3 tbsp freeze dried strawberries
60ml vegetable oil

Method

1. Put the oats, pecans, omega seed mix, chia seeds, cacao nibs and cacao in a large mixing bowl and mix together
2. Pour in the vegetable oil and mix together
3. Then add the maple syrup and mix together
4. Take out one third of the mixture and spread onto a lined baking sheet and press down
5. Bake for 10mins at 180C
6. Then take out and break up a bit and then put back into the oven for another 5-10mins
7. Leave to cool and transfer to another bowl
8. Do the same with the other two thirds of the mixture
9. Finally add in the dried strawberries and mix together
